I agree with Tyashmom. Healthy people are not likely to eat from vending carts often enough to plan a menu around. They are to health concious. They are calorie counters, vegetarians, on protein diets and other things. They want to control the food they put in their mouths. This means they tend to prepare food for themselves and bring their lunches. Our market is people who let food control them. They can't resist good smells and great tasting food no matter what their health situation is. They eat out often.
