Clarification - I just read what I wrote and I want to make sure there is no confusion. It would appear that any restaurant can "become" a commissary. A restaurant is not automatically a commissary. They must be licensed to act as a commissary. The article mentioned above gives more information. It is good reading for anyone running a mobile catering business, even if it is a food cart.

I am trying to find a list of commissaries. If anyone knows if or where such a list exists I would be pleased if they would post the information.
