Operating a concession stand can be fun, but it is hard work and the hours at some of the festivals and fairs can be brutal.

Finding venues for a concession stand, especially outside of your home area can be a trying experience. www.countyfairgrounds.net lists all the county fairs across the US and if you click on the links you will usually find a form to fill out if you want to supply concession services. I would recommend that you produce a small electronic brochure that will show a picture of the concession trailer and what food or other items you plan on selling. (Most fairs are concerned about quality and appearance). Being new, I would recommend that you do some fairs or festivals in your area, concentrate on the smaller ones, it will give you an opportunity to get used to your operation and give you some experience and references. Depending on the area and your concession trailer (whether you need a water and electrical hook-up) you can try parking near a baseball field on a weekend where they have little league games all day. You might also want to join groups such as the Rotary club, your local chapter will be able to put you in touch with chapters throughout the US and you can ask what is happening in any specific area.

If you haven't purchased your trailer yet, you might want to consider buying a concession business. The difference being that if you buy a used trailer from someone who has been out at fairs, you will be able to use their experience when applying to other fairs. Some concessionaires when selling their business will actually go to the first few fairs with you, some will have advanced bookings already.
