Im in the process of building a lunch truck.I have been planning this for a while and have purchased a 18 ft stepvan,plus all the cooking equipment ect... my question? is there a set standard placement for all fixtures,appliances,plumbing,electrical wiring,ect...Any info on this out there.I called the health dept and all they wanted to know was were my commissary was gonna be.I dont know that yet.It will take me a good long year or two to complete this truck.I know that all concession trucks and trailers have to be built to code,and certain specs.There has to be a guidelines manual to constructing one of these things,and i want to know.It would be crazy to think that all states and countys would be different.I would hate to go to another state and have the health department say that i have my frig to close to that ,and this not far away from that! You know what i mean.When I call the health dept to inspect this vehicle for the first time,I want to celebrate after! I live south of chicago and any info would be greatly appreciated. Thanks!
